Wow.  If you happen to be a fan of really good salsa and love corn in the summer as much as I do, this may become one of your favorite recipes.  My friend Ellen brought this delicious salsa over the other night and I just wanted to eat it with a spoon.  It’s that good.

Ingredients
1 JALAPENO (grilled, skin removed & chopped)
3 TOMATOES (grilled, cored & chopped)
1-2 SERRANO CHILI PEPPERS (grilled, skin removed & chopped)
1 Large RED PEPPER (grilled, skin removed & chopped)
2 ears of CORN (grilled and cut off the cob)
½ medium ONION (minced)
¼ cup CILANTRO (chopped)
3 cloves GARLIC (minced)
1 TBSP OLIVE OIL
Juice of ½ LIME
CAYENNE PEPPER to taste
CHOLULA HOT SAUCE to taste
SALT & PEPPER to taste

Mix everything in a bowl and chill.  If you want to make it the day before a big party, it tastes even better the next day.  Serve with tortilla chip (and a skinny margarita) or just eat it with just a spoon J
